Perfect Pumpkin Pancakes!

Wake up to the smell of these delicious pancakes! Here’s what you  need:

  • 2 cups all purpose flour

  • 3 tsp baking soda

  • 1 tsp salt

  • 1 ½ tsp cinnamon

  • ¼ cup brown sugar

  • ¼ cup granulated sugar

  • 1 cup pumpkin puree

  • 1 tsp vanilla extract

  • 2 large eggs

  • 4 T melted butter

  • 1 ½ cups milk


How to make it!: 

Step 1: Preheat griddle or nonstick pan on medium heat

Step 2: In a large bowl whisk together the flour, baking powder, salt and cinnamon

Step 3: In a separate bowl, mix sugars, vanilla extract, pumpkin puree, eggs, butter and milk

Step 4: Mix together the dry and wet (DON’T OVERMIX!)

Step 5: Set batter aside for 5 minutes as you butter the pan

Step 6: Cook for 4 minutes each side

Serve with whipped cream or syrup and enjoy!
